Think dairy super bowl!

Adding dairy to your favorite football fare is simple and delicious. You will have a super bowl filled with calcium, vitamins and minerals. Here are some recipes that are sure to score many touchdowns even if your team doesn't. And don't forget to refuel with yummy chocolate milk.

I will begin with a dessert recipe as it requires 8 hours of refrigeration or overnight followed by an appetizer and main dish. All are simple to prepare and provide you with your three servings of dairy. Enjoy!

Cream Cheese Football
Cut Out Ice Cream Sandwiches

1 cup white sugar
1 cup butter, softened
1 (3 ounce) package cream cheese, softened
1/2 teaspoon salt
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1 egg yolk
2 1/4 cups all-purpose flour
football shaped cookie cutter
1 container of your favorite ice cream, softened
Yield: 6 dozen

• In a large bowl, combine the sugar, butter, cream cheese, salt, almond and vanilla extracts, and egg yolk. Beat until smooth. Stir in flour until well blended. Chill the dough for 8 hours, or overnight.

Preheat oven to 375 degrees.

On a lightly floured surface, roll out the dough 1/3 at a time to 1/8 inch thickness, refrigerating remaining dough until ready to use. Cut into football shapes with lightly floured football cookie cutter.

Place 1 inch apart on ungreased cookie sheet. Bake for 7 to 10 minutes in the preheated oven, or until light and golden brown. Cool cookies completely.

Before serving, take two cookies and place a large scoop of softened ice cream between them to create a sandwich. Press down gently. Use a knife or rubber scraper to remove excess. Wrap each sandwich in plastic wrap and return to freeze to re harden. Repeat until desired amount of sandwiches are made.

Nacho Cheese Sauce
2 tablespoons butter
2 tablespoons all purpose flour
1 cup milk
7 slices American cheese
1/2 teaspoon salt
1 bag of your favorite nacho chips
Yield: 2 cups

• In a medium saucepan over medium heat, melt butter. Stir in flour. Pour in milk and stir until mixture thickens. Stirring constantly, mix in the cheese slices and salt. Stir until all of the cheese had melted and all of the ingredients are well blended; about 15 minutes.

Easy Party Pizzas
1 package hamburger buns
1 jar pizza sauce
1 package of shredded mozzarella cheese or a variety of cheese
Additional toppings, optional
pizza spices to taste

• Preheat oven to 375 degrees. Open and separate hamburger buns; place outsides down on an ungreased cookie sheet. Add a small amount of pizza sauce to each bun and spread around until the bun is covered. Top with cheese(es) and other toppings. Bake for 8-10 minutes. Pizzas are done when cheese is melted and beginning to bubble. Exact time will depend on the amount of toppings used.
